Color May World marks the second monthly wine dinner of the 2016 season at Skytop Lodge.

As the master sommelier Jim Beau Borick approaches the sensory board, which is essentially one long row of aromatherapy—lemon slices, pieces of oak, fresh lavender—stashed in banquet glasses atop a wooden buffet, a crowd forms in front of him. He begins with the white, a Chardonnay by Valley of the Moon, the featured winemaker of the night. This is the second monthly wine dinner of the 2016 season at Skytop Lodge and Borick’s pitch is as light as the tan suit he wears. Every so often he weaves in a heavier note, one that swirls into his proclaimed lifelong fascination with the fermented grape: “We gravitate toward wine because of its mystery…yet the beauty of wine… is found in its complexity.”

It’s Jim Beau Borick, the master sommelier, eighth year working at Skytop Lodge.

At the end of cocktail hour, Borick moves the crowd, mostly couples varying in age, to the main dinning room and assigned table. A relentless spring rain slides down the large windows yet no one seems to notice. The décor is inviting. The tables are set with fresh flowers, candlelight, and several glasses of wine. Poking out of a linen napkin, silky to touch, is the five-course menu.

It’s an eclectic set, a collective feast from around the world: striped bass over a French soubise, tender lamb served atop southern corn grits, and even the dessert is named after the Russian ballerina, Anna Pavlova. The showstopper, however, is undoubtedly the Morell Mushroom Chawanmushi, a Japanese hot appetizer, brilliantly displayed inside an intact eggshell and paired with Valley of the Moon’s Rosé. This harmonious duet stirs conversation among the table.

Mingling, in fact, is often encouraged throughout the night. The table assignments are of no accident, reveals the general manager Jeffrey Rudder during one of several appearances he made during the event. The number of visits at Skytop Lodge determines your table assignment: returning guests, new guests, and property residents. I quickly learn the couple sitting across from me is celebrating their seventh anniversary for the seventh time at Skytop Lodge.

Chandra Dombromski’s and Rob Nealon’s, of Shavertown Pennsylvania, first date was at Skytop, seven years ago, and they’ve been coming back every year since. “Skytop really knows how to make our stay special each year,” says Dombromski mid sip. She finishes off the bold red, Valley of the Moon’s Zinfandel, the last wine to taste of the night. Within a few seconds, our server, Amanda McDevitt, of Promised Land, swings by our table, smiling, with an opened bottle in her hand.

This season marks Amanda McDevitt fifth year working at Skytop Lodge.
